Best Mango and Pineapple Salsa
Easy, flavorful, refreshing Mango, and Pineapple salsa! Serve it with tortilla chips or fish. Or just eat it by itself as a snack.
When I use red onion in salsa and other salad recipes, I like to mince or thinly slice the onion, salt it, and let it sit for 15-30 minutes. It will soften the onion and give a little salty flavor. Squeeze it to release its juices.
Another trick: I always buy canned mango too; in case the fresh mango is not ripe enough.
I love using mango and pineapple (in green smoothies too) because they are low in calories and packed with nutrients, Vitamin C, antioxidants, and immune-boosting vitamins. And they taste amazing!
Ingredients:
1 small red onion
1 teaspoon salt
1 tablespoon minced fresh jalapeno
1 clove of minced garlic
2 tablespoon freshly squeezed lime juice
2 cups chopped fresh pineapple
2 cups chopped mango
½ cup chopped red or orange bell pepper
1 tablespoon chopped cilantro (or parsley)
Instructions:
1. Mince the red onion, salt it, and let it sit for 15-30 minutes.
2. While you are waiting, add the jalapeno, garlic, and lime juice into a bowl. Chop the mango, pineapple, and bell pepper.
3. Squeeze the red onion a bit to release its juices and add to the bowl.
4. Add remaining ingredients and stir until well combined. You can serve immediately or refrigerate.
Kid-friendly version: mix the chopped mango, pineapple, and bell pepper with a little bit of lime juice.
